Ingredients
  

Cherry Layer
  • 2 cups cherries fresh or frozen, pitted
  • 0.25 cup sugar
  • 1 tbsp lemon juice
  • 2 tbsp amaretto
Cream Layer
  • 1.5 cups mascarpone cheese
  • 1 cup heavy cream
  • 0.5 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp amaretto optional
Ladyfingers
  • 1.5 cups espresso or strong coffee cooled
  • 0.25 cup amaretto
  • 24 ladyfingers
Finish
  • cocoa powder for dusting
  • extra cherries for garnish

Method
 

  1. Cook cherries with sugar and lemon juice until softened, then stir in amaretto and cool.
  2. Whip heavy cream to soft peaks.
  3. Mix mascarpone, powdered sugar, vanilla, and optional amaretto until smooth.
  4. Fold whipped cream into mascarpone mixture.
  5. Combine cooled espresso with amaretto for dipping.
  6. Dip ladyfingers briefly and create a base layer in dish.
  7. Spread mascarpone cream over ladyfingers, then add cherry mixture.
  8. Repeat layers and cover. Refrigerate at least 4 hours, preferably overnight.
  9. Dust with cocoa powder and top with cherries before serving.

Notes

For best texture, chill overnight. Use fresh cherries in summer for the brightest flavor.
