- Cook cherries with sugar and lemon juice until softened, then stir in amaretto and cool.
- Whip heavy cream to soft peaks.
- Mix mascarpone, powdered sugar, vanilla, and optional amaretto until smooth.
- Fold whipped cream into mascarpone mixture.
- Combine cooled espresso with amaretto for dipping.
- Dip ladyfingers briefly and create a base layer in dish.
- Spread mascarpone cream over ladyfingers, then add cherry mixture.
- Repeat layers and cover. Refrigerate at least 4 hours, preferably overnight.
- Dust with cocoa powder and top with cherries before serving.
Notes
For best texture, chill overnight. Use fresh cherries in summer for the brightest flavor.
