Cherry Ginger Iced Tea

Ingredients
  

Tea Base
  • 6 cups water
  • 4 black tea bags or 4 tsp loose tea
  • 2 inches fresh ginger root sliced thin
  • 1 cup fresh cherries pitted
  • 0.25 cup honey or maple syrup
  • 2 tbsp fresh lemon juice
Serving
  • ice cubes for serving
  • fresh mint leaves for garnish
  • additional cherries for garnish

Equipment

  • Large saucepan
  • Fine mesh strainer
  • Pitcher
  • Muddler or wooden spoon

Method
 

  1. Bring 4 cups of water to a boil in a large saucepan. Remove from heat and add tea bags and sliced ginger. Steep for 5-7 minutes.
  2. While tea steeps, muddle fresh cherries in a small bowl to release juices and break them down slightly.
  3. Remove tea bags and strain out ginger slices. Add muddled cherries to warm tea and steep for 3-4 minutes.
  4. Stir in honey while tea is warm, ensuring complete dissolution. Add lemon juice and mix well.
  5. Strain tea through fine-mesh strainer to remove cherry pulp and ginger pieces, pressing solids gently.
  6. Add remaining 2 cups cold water to concentrated tea mixture. Mix well.
  7. Refrigerate for at least 2 hours until completely chilled.
  8. Serve over ice in tall glasses, garnishing with mint leaves and additional cherries.

Notes

Tea keeps in refrigerator for up to 5 days. Adjust sweetness to taste. For caffeine-free version, substitute with herbal tea. Can be made sparkling by adding soda water when serving.
