- Preheat oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
- Whisk melted butter and brown sugar in a bowl until smooth.
- Add egg and vanilla extract and whisk until creamy.
- In another bowl whisk flour, baking powder, and salt.
- Stir dry ingredients into wet ingredients until just combined.
- Fold in rainbow sprinkles and optional white chocolate chips.
- Spread batter evenly into prepared pan.
- Bake 20–24 minutes until edges are golden and center is set.
- Cool completely before slicing into bars.
Notes
Do not overbake to maintain the chewy blondie texture.
