Ingredients
  

  • 8 oz chow mein noodles
  • 1 lb chicken breast thinly sliced
  • 2 tbsp vegetable oil
  • 2 cups green cabbage shredded
  • 1 cup carrots julienned
  • 3 green onions sliced
  • 0.25 cup soy sauce
  • 2 tbsp oyster sauce
  • 1 tsp sesame oil
  • 1 tbsp cornstarch
  • 0.5 cup chicken broth
  • 1 tsp sugar
  • 2 cloves garlic minced
  • 1 tsp fresh ginger grated

Equipment

  • Wok or large skillet
  • Mixing bowl
  • Whisk
  • Tongs

Method
 

  1. Whisk all chow mein sauce ingredients together and set aside.
  2. Cook chow mein noodles according to package directions and drain.
  3. Heat oil in a wok and cook chicken until just done. Remove.
  4. Stir-fry cabbage and carrots briefly in the same pan.
  5. Return chicken and add noodles.
  6. Pour in sauce and toss until glossy and evenly coated.
  7. Add green onions, season if needed, and serve hot.

Notes

Serve immediately for best noodle texture.
