- Combine ground chicken, breadcrumbs, parmesan, egg, garlic, onion, parsley, salt, pepper, and Italian seasoning in a bowl.
- Roll the mixture into small meatballs about 1–1½ inches in size.
- Heat olive oil in a skillet and brown meatballs on all sides.
- Remove meatballs and melt butter in the same pan.
- Sauté garlic until fragrant.
- Add chicken broth and heavy cream, simmering gently.
- Stir in parmesan cheese and seasonings.
- Add spinach and cook until wilted.
- Return meatballs to the pan and simmer until cooked through.
- Serve hot with pasta, rice, or bread.
Notes
For extra flavor, add mushrooms or a splash of lemon juice to the sauce.
