Ingredients
  

Chicken Shawarma
  • 2 lb chicken thighs boneless skinless
  • 0.5 cup plain yogurt
  • 0.25 cup olive oil
  • 3 tbsp lemon juice fresh
  • 4 cloves garlic minced
  • 2 tsp cumin
  • 2 tsp paprika
  • 1 tsp turmeric
  • 0.5 tsp cinnamon
  • 1 tsp salt
Garlic Sauce
  • 1 cup mayonnaise
  • 3 cloves garlic very finely minced
  • 2 tbsp lemon juice
  • 2 tbsp olive oil

Equipment

  • Mixing bowls
  • Cast iron skillet or baking sheet

Method
 

  1. Whisk together yogurt, olive oil, lemon juice, garlic, spices, salt, and pepper.
  2. Add chicken and coat thoroughly. Marinate at least 2 hours or overnight.
  3. Preheat oven to 425°F or heat skillet over medium-high.
  4. Cook chicken until deeply golden and cooked through.
  5. Rest chicken, then slice thinly.
  6. Mix garlic sauce ingredients until smooth.
  7. Serve chicken drizzled with garlic sauce.

Notes

Marinating overnight enhances flavor. Serve with pita, pickles, or rice.
