Ingredients
  

Chicken Marinade
  • 1.5 lbs boneless skinless chicken thighs
  • 2 tbsp olive oil
  • 2 tbsp lime juice freshly squeezed
  • 2 cloves garlic minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 0.5 tsp oregano
  • 0.5 tsp salt
  • 0.25 tsp black pepper
For Serving
  • 8 small corn tortillas
  • 0.5 cup diced onion
  • 0.5 cup chopped fresh cilantro
  • 1 lime cut into wedges

Method
 

  1. Whisk together olive oil, lime juice, garlic, and spices in a bowl.
  2. Add chicken and marinate 30 minutes or up to 8 hours.
  3. Grill or pan-sear chicken 5–6 minutes per side until cooked and slightly charred.
  4. Dice cooked chicken into small pieces.
  5. Warm corn tortillas on a skillet until soft and pliable.
  6. Assemble tacos with chicken, onion, cilantro, and lime juice.
  7. Serve immediately with optional salsa or avocado.

Notes

For smoky flavor, use an outdoor grill. Double tortillas for authentic texture.
