Ingredients
  

  • 2 tbsp butter
  • 0.25 cup onion finely diced
  • 2 cloves garlic minced
  • 8 oz cream cheese softened
  • 1 cup milk
  • 12 oz white American cheese cubed
  • 4 oz green chiles diced
  • 2 cups fresh spinach chopped
  • 0.5 tsp salt
  • 0.25 tsp white pepper

Method
 

  1. Melt butter in a saucepan over medium heat.
  2. Cook onion until softened, then add garlic.
  3. Stir in cream cheese and milk until smooth.
  4. Add white cheese gradually, stirring until melted.
  5. Stir in green chiles and spinach.
  6. Cook until spinach wilts and queso is smooth.
  7. Season with salt and white pepper.
  8. Serve warm.

Notes

Keep heat low to prevent cheese from separating.
