Ingredients
  

  • 500 g chicken breast cut into pieces
  • 2 eggs
  • 0.5 cup cornstarch
  • 0.25 cup all-purpose flour
  • salt to taste
  • pepper to taste
  • 0.33 cup lemon juice fresh
  • 1 tbsp lemon zest
  • 0.5 cup sugar
  • 0.5 cup chicken stock
  • 1 tbsp soy sauce
  • 1 tsp ginger minced
  • 1 tsp garlic minced

Equipment

  • Deep skillet or wok
  • Mixing bowls

Method
 

  1. Season chicken pieces lightly with salt and pepper.
  2. Mix eggs, cornstarch, and flour to form a batter.
  3. Coat chicken evenly in batter.
  4. Fry chicken until golden and crisp. Drain.
  5. Simmer lemon juice, zest, sugar, stock, soy sauce, garlic, and ginger.
  6. Thicken sauce with cornstarch slurry.
  7. Toss chicken with sauce or drizzle before serving.

Notes

Sauce chicken just before serving to keep it crispy.
