Ingredients
  

Chipotle Chicken
  • 1.5 lbs chicken breasts or thighs
  • 2 tbsp olive oil
  • 2 chipotle peppers in adobo
  • 1 tbsp adobo sauce
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp chili powder
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 1 lime juiced
  • salt and pepper to taste
Bowl Base
  • 3 cups rice white, brown, or cauliflower
  • 1 can black beans drained and rinsed
  • 1 cup corn fresh, canned, or roasted
  • 1 cup lettuce shredded
Creamy Chipotle Sauce
  • 0.5 cup Greek yogurt or sour cream
  • 2 tsp chipotle adobo sauce
  • 1 garlic clove grated
  • 0.5 lime juiced
  • salt and pepper to taste

Equipment

Method
 

  1. Blend chipotle peppers, adobo sauce, olive oil, spices, and lime to make a marinade.
  2. Marinate chicken for 20 minutes or longer.
  3. Grill or sear chicken 5–6 minutes per side and slice.
  4. Warm black beans and char the corn in a skillet.
  5. Whisk Greek yogurt, chipotle sauce, garlic, and lime to make the sauce.
  6. Assemble bowls with rice, beans, corn, lettuce, and chicken.
  7. Drizzle with creamy chipotle sauce and garnish with cilantro.

Notes

Add avocado for extra creaminess.
