Ingredients
  

Chocolate Cupcakes
  • 1.25 cups all-purpose flour
  • 0.5 cup cocoa powder
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 2 eggs large
  • 0.5 cup milk
  • 0.5 cup vegetable oil
  • 2 tsp vanilla extract
  • 0.5 cup hot coffee or hot water
Espresso Soak
  • 0.25 cup espresso or strong coffee warm
  • 1 tbsp sugar
  • 0.5 tsp vanilla extract
Mascarpone Frosting
  • 8 oz mascarpone cheese cold
  • 1 cup heavy cream cold
  • 0.75 cup powdered sugar
  • 1 tsp vanilla extract
Finishing
  • unsweetened cocoa powder for dusting

Method
 

  1. Preheat oven to 350°F (175°C). Line a cupcake pan with liners.
  2. Whisk flour, cocoa, sugar, baking powder, baking soda, and salt in a bowl.
  3. Whisk eggs, milk, oil, and vanilla in a separate bowl.
  4. Combine wet and dry ingredients, then slowly mix in hot coffee until smooth.
  5. Fill cupcake liners 2/3 full and bake 16–18 minutes.
  6. Mix espresso, sugar, and vanilla for the soak.
  7. Brush warm cupcakes with espresso soak and cool completely.
  8. Whip mascarpone, powdered sugar, and vanilla until smooth. In another bowl whip cream to medium peaks.
  9. Fold whipped cream into mascarpone to create frosting.
  10. Pipe frosting onto cupcakes and dust with cocoa powder.

Notes

Keep frosting chilled for best texture. Brush cupcakes lightly — avoid over-soaking.
