Ingredients
  

Oatmeal Cookies
  • 1 cup unsalted butter softened
  • 1 cup brown sugar
  • 0.5 cup granulated sugar
  • 2 large eggs
  • 1 tbsp vanilla extract
  • 1.5 cups flour
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 1 tsp cinnamon
  • 0.25 tsp nutmeg
  • 0.5 tsp salt
  • 3 cups rolled oats
Cream Filling
  • 0.5 cup unsalted butter softened
  • 1 cup marshmallow fluff
  • 1.5 cups powdered sugar
  • 1 tsp vanilla extract
  • salt pinch
Decoration
  • red and green sprinkles for rolling edges

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Cream butter and sugars until fluffy.
  3. Add eggs and vanilla and mix again.
  4. Whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Add dry ingredients to wet mixture, then fold in oats.
  6. Scoop dough onto lined baking sheets and bake 9–11 minutes.
  7. Beat filling ingredients until smooth and fluffy.
  8. Spread filling onto one cookie and top with another to create pies.
  9. Roll edges in red and green Christmas sprinkles.

Notes

Cookies soften after assembly, making them even more delicious.
