- Preheat oven to 350°F (175°C).
- Cream butter and sugars until fluffy.
- Add eggs and vanilla and mix again.
- Whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Add dry ingredients to wet mixture, then fold in oats.
- Scoop dough onto lined baking sheets and bake 9–11 minutes.
- Beat filling ingredients until smooth and fluffy.
- Spread filling onto one cookie and top with another to create pies.
- Roll edges in red and green Christmas sprinkles.
