Salad Ingredients
  • 6 cups mixed greens
  • 1 large apple thinly sliced
  • 1 cup pomegranate seeds
  • 0.5 cup feta or goat cheese crumbled
  • 0.5 cup toasted pecans or walnuts roughly chopped
  • 0.25 cup dried cranberries optional
Dressing
  • 3 tbsp olive oil
  • 1 tbsp honey
  • 1 tbsp lemon juice or apple cider vinegar
  • 1 tsp Dijon mustard
  • salt and pepper to taste

Equipment

  • Large salad bowl
  • Cutting board
  • Sharp knife
  • Small whisk

Method
 

  1. Place mixed greens in a large serving bowl.
  2. Top with sliced apple, pomegranate seeds, toasted nuts, and dried cranberries.
  3. Sprinkle crumbled feta or goat cheese on top.
  4. Whisk together olive oil, honey, lemon juice, Dijon mustard, salt, and pepper.
  5. Drizzle dressing over salad right before serving and toss gently.

Notes

Add citrus slices or swap nuts for pistachios for extra color.
