Ingredients
  

Cod
  • 4 fillets cod patted dry
  • 0.5 tsp salt
  • 0.25 tsp pepper
Coconut Curry Sauce
  • 13.5 oz coconut milk full-fat
  • 2 tbsp curry paste red or yellow
  • 2 garlic cloves minced
  • 1 tsp ginger grated
  • 1 tbsp lime juice fresh
  • 1 tsp honey
  • 1 tsp curry powder
  • 0.5 tsp turmeric
  • 0.5 tsp salt
  • 0.25 tsp pepper
  • 2 tbsp cilantro chopped
Optional Add-ins
  • 1 cup bell peppers or cherry tomatoes

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Season cod fillets with salt and pepper and place in baking dish.
  3. Whisk coconut milk, curry paste, garlic, ginger, lime juice, honey, curry powder, turmeric, and seasoning together.
  4. Pour the coconut curry sauce over the cod.
  5. Add optional vegetables around the fillets.
  6. Bake 15–22 minutes depending on thickness until fish flakes easily.
  7. Garnish with cilantro and serve with rice or naan.

Notes

For extra richness, add a spoonful of coconut cream before baking.
