Ingredients
  

Curry
  • 1 lb white fish fillets cut into chunks
  • 1 tbsp oil
  • 1 onion finely chopped
  • 3 cloves garlic minced
  • 1 tbsp ginger grated
  • 1 tbsp red curry paste
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1 can coconut milk 14 oz
  • 0.5 cup broth
  • 2 limes juiced
  • 1 cup cherry tomatoes halved
Rice
  • 1 cup jasmine rice
  • 2 cups water

Equipment

Method
 

  1. Cook jasmine rice according to instructions.
  2. Sauté onion, garlic, and ginger in oil until fragrant.
  3. Add spices and curry paste, stirring well.
  4. Pour in coconut milk and broth, simmer gently.
  5. Add tomatoes and fish, cook until fish flakes easily.
  6. Finish with lime juice and serve over rice.

Notes

Use fresh lime juice for best flavor.
