Ingredients
  

  • 1.5 cups jasmine rice rinsed
  • 1 cup coconut milk full-fat
  • 1 cup water
  • 1 tbsp coconut oil
  • 0.75 tsp salt
  • 0.5 tsp sugar optional

Method
 

  1. Rinse jasmine rice under cold water until mostly clear.
  2. Combine coconut milk, water, salt, sugar, and coconut oil in a saucepan.
  3. Stir in rice and bring to a gentle boil.
  4. Cover, reduce heat to low, and simmer for 15 minutes.
  5. Remove from heat and let rest, covered, for 5 minutes.
  6. Fluff with a fork and serve warm.

Notes

Adjust salt to taste and avoid lifting the lid while cooking.
