- Blend or mix chipotle peppers, adobo sauce, garlic, olive oil, cumin, oregano, salt, pepper, and lime juice to form a marinade.
- Add chicken thighs and coat thoroughly. Marinate 30 minutes to 8 hours.
- Heat a skillet or grill over medium-high heat.
- Cook chicken 5–7 minutes per side until charred and cooked through.
- Let chicken rest 5 minutes, then chop into small bite-size pieces.
- Serve in bowls, burritos, tacos, salads, or meal prep portions.
Notes
For extra smoky flavor, add one teaspoon smoked paprika.
