Copycat Subway Italian Herb and Cheese Bread

Homemade version of Subway's famous Italian herb and cheese bread with perfect herb blend and gooey cheese throughout.

Ingredients
  

Bread Base
  • 3 cups bread flour
  • 1 packet active dry yeast
  • 1 tbsp sugar
  • 1 tsp salt
  • 1 tbsp Italian seasoning
  • 1 tsp garlic powder
  • 1 cup warm water
  • 2 tbsp olive oil
Cheese and Toppings
  • 1 cup mozzarella cheese shredded
  • 0.5 cup cheddar cheese shredded
  • 2 tbsp butter melted
  • 1 tbsp dried oregano
  • 1 tbsp dried basil
  • 0.25 cup Parmesan cheese grated

Equipment

  • Large mixing bowl
  • Baking sheet
  • Wire rack
  • Kitchen towel

Method
 

  1. Combine warm water, sugar, and yeast in large bowl. Let stand 5-10 minutes until foamy.
  2. Add olive oil, salt, Italian seasoning, and garlic powder to yeast mixture, stirring well.
  3. Gradually add bread flour, mixing until shaggy dough forms. Turn onto floured surface.
  4. Knead dough 8-10 minutes until smooth and elastic. Place in oiled bowl, cover.
  5. Rise in warm place 60-90 minutes until doubled in size.
  6. Punch down dough, work in half the cheese mixture. Shape into loaf on baking sheet.
  7. Rise additional 30-45 minutes until puffed. Preheat oven to 375°F.
  8. Brush with melted butter, sprinkle remaining cheese and herbs on top.
  9. Bake 25-30 minutes until golden brown and internal temperature reaches 190°F.
  10. Cool completely on wire rack before slicing.

Notes

For best results, use bread flour for proper texture. Store at room temperature up to 3 days or freeze sliced portions up to 3 months.
