Veggie Bake
  • 2 cups cottage cheese
  • 4 eggs large
  • 1 cup shredded cheese cheddar or mozzarella
  • 1 cup broccoli florets chopped
  • 1 cup spinach chopped
  • 0.5 cup bell pepper diced
  • 0.5 cup onion diced
  • 1 tbsp olive oil
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp black pepper
  • 0.5 tsp salt
  • 0.5 tsp oregano dried
  • 0.5 tsp basil dried

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Grease a baking dish lightly.
  3. Heat olive oil in a skillet and cook onions and bell peppers 3–4 minutes.
  4. Add broccoli and cook 2 minutes, then stir in spinach until wilted.
  5. In a bowl, mix cottage cheese, eggs, shredded cheese, garlic powder, onion powder, salt, pepper, oregano, and basil.
  6. Fold sautéed vegetables into the mixture.
  7. Pour mixture into baking dish and top with extra cheese if desired.
  8. Bake 35–40 minutes until set and golden.
  9. Cool 10 minutes before slicing.

Notes

For extra flavor, top with herbs or red pepper flakes before serving.
