Method
- Preheat oven to 375°F (190°C).
- Grease a baking dish lightly.
- Heat olive oil in a skillet and cook onions and bell peppers 3–4 minutes.
- Add broccoli and cook 2 minutes, then stir in spinach until wilted.
- In a bowl, mix cottage cheese, eggs, shredded cheese, garlic powder, onion powder, salt, pepper, oregano, and basil.
- Fold sautéed vegetables into the mixture.
- Pour mixture into baking dish and top with extra cheese if desired.
- Bake 35–40 minutes until set and golden.
- Cool 10 minutes before slicing.
Notes
For extra flavor, top with herbs or red pepper flakes before serving.
