Ingredients
  

Egg Base
  • 6 eggs large
  • 1 cup cottage cheese
  • 0.5 cup shredded cheese
  • 0.25 tsp salt
  • 0.25 tsp black pepper
Optional Fillings
  • 0.25 cup cooked bacon crumbled
  • 0.25 cup bell peppers diced
  • 0.25 cup spinach chopped
  • 0.25 cup ham diced
  • 2 tbsp green onions chopped
  • 0.25 cup feta cheese crumbled

Method
 

  1. Preheat oven to 350°F (175°C) and grease a muffin tin.
  2. Blend eggs, cottage cheese, shredded cheese, salt, and pepper until smooth.
  3. Place desired fillings into muffin cups.
  4. Pour egg mixture into each cup about three quarters full.
  5. Bake for 18–22 minutes until egg bites are set.
  6. Cool briefly before removing and serving.

Notes

Perfect for meal prep and can be frozen for quick breakfasts.
