Ingredients
  

  • 15 oz black beans rinsed and drained
  • 15 oz black-eyed peas rinsed and drained
  • 1.5 cups corn
  • 1.5 cups tomatoes diced
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 0.5 red onion diced
  • 1 avocado diced

Equipment

  • Mixing bowl
  • Cutting board
  • Knife
  • Whisk

Method
 

  1. Combine beans, corn, tomatoes, peppers, and onion in a large bowl.
  2. Gently fold in avocado and cilantro.
  3. Whisk dressing ingredients together.
  4. Pour dressing over mixture and toss gently.
  5. Refrigerate at least 30 minutes before serving.

Notes

Add avocado just before serving for best texture if making ahead.
