Ingredients
  

Soup
  • 1 tbsp olive oil
  • 1 lb ground beef or Italian sausage
  • 1 onion diced
  • 4 cloves garlic minced
  • 2 tbsp tomato paste
  • 28 oz crushed tomatoes
  • 6 cups chicken or beef broth
  • 1 tsp Italian seasoning
  • 0.5 tsp dried basil
  • 0.5 tsp dried oregano
  • 0.5 tsp salt
  • 0.5 tsp pepper
  • 8-10 lasagna noodles broken into pieces
Cheese Topping
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella
  • 0.25 cup Parmesan cheese grated
  • fresh basil for garnish

Equipment

  • Wooden spoon

Method
 

  1. Heat olive oil and brown the ground beef or sausage, draining excess grease.
  2. Add onion and sauté 3–4 minutes. Add garlic and cook briefly.
  3. Stir in tomato paste, then add crushed tomatoes and broth.
  4. Add Italian seasoning, basil, oregano, salt, and pepper.
  5. Break lasagna noodles into pieces and add to the pot. Simmer until tender.
  6. Mix ricotta, mozzarella, and Parmesan in a bowl.
  7. Serve soup hot with a scoop of cheese mixture and fresh basil.

Notes

Add heavy cream during simmering for extra richness.
