Method
- Heat olive oil and brown the ground beef or sausage, draining excess grease.
- Add onion and sauté 3–4 minutes. Add garlic and cook briefly.
- Stir in tomato paste, then add crushed tomatoes and broth.
- Add Italian seasoning, basil, oregano, salt, and pepper.
- Break lasagna noodles into pieces and add to the pot. Simmer until tender.
- Mix ricotta, mozzarella, and Parmesan in a bowl.
- Serve soup hot with a scoop of cheese mixture and fresh basil.
Notes
Add heavy cream during simmering for extra richness.
