Method
- Preheat oven to 325°F (165°C) and season beef with salt and pepper.
- Sear beef in olive oil until browned on all sides.
- Remove beef and sauté onion and garlic until softened.
- Add cranberries, balsamic vinegar, broth, and honey; stir well.
- Return beef to pot and add rosemary.
- Cover and roast until beef is tender.
- Remove beef and simmer sauce until thickened.
- Slice beef and serve with cranberry balsamic sauce.
Notes
Sauce thickens as it cools; adjust sweetness to taste.
