Ingredients
  

  • 3 lb beef roast chuck or round
  • 2 tbsp olive oil
  • 1 onion sliced
  • 3 cloves garlic minced
  • 1.5 cups cranberries fresh or dried
  • 0.75 cup balsamic vinegar
  • 1 cup beef broth
  • 0.25 cup honey or brown sugar
  • 2 sprigs fresh rosemary
  • 1 tsp salt
  • 0.5 tsp black pepper

Equipment

  • Dutch oven or roasting pan

Method
 

  1. Preheat oven to 325°F (165°C) and season beef with salt and pepper.
  2. Sear beef in olive oil until browned on all sides.
  3. Remove beef and sauté onion and garlic until softened.
  4. Add cranberries, balsamic vinegar, broth, and honey; stir well.
  5. Return beef to pot and add rosemary.
  6. Cover and roast until beef is tender.
  7. Remove beef and simmer sauce until thickened.
  8. Slice beef and serve with cranberry balsamic sauce.

Notes

Sauce thickens as it cools; adjust sweetness to taste.
