- Preheat oven to 375°F (190°C).
- Cut a pocket into each chicken breast without slicing through completely.
- Stuff each pocket with Brie slices, cranberry sauce, and thyme. Secure with toothpicks.
- Rub chicken with olive oil, garlic, salt, and pepper.
- Sear in a hot oven-safe skillet with butter for 2–3 minutes per side until golden.
- Transfer skillet to oven and bake for 20–25 minutes until cooked through.
- Optional: add balsamic vinegar to pan juices and simmer 2 minutes for glaze.
- Rest for 5 minutes before slicing. Garnish with fresh herbs and serve warm.
