  • 4 chicken breasts boneless, skinless
  • 4 oz Brie cheese sliced
  • 0.5 cup cranberry sauce
  • 2 cloves garlic minced
  • 1 tbsp fresh thyme or ½ tsp dried
  • 1 tbsp olive oil
  • 1 tbsp butter for searing
  • 1 tbsp balsamic vinegar optional glaze
  • 1 tsp salt to taste
  • 0.5 tsp black pepper freshly cracked

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Cut a pocket into each chicken breast without slicing through completely.
  3. Stuff each pocket with Brie slices, cranberry sauce, and thyme. Secure with toothpicks.
  4. Rub chicken with olive oil, garlic, salt, and pepper.
  5. Sear in a hot oven-safe skillet with butter for 2–3 minutes per side until golden.
  6. Transfer skillet to oven and bake for 20–25 minutes until cooked through.
  7. Optional: add balsamic vinegar to pan juices and simmer 2 minutes for glaze.
  8. Rest for 5 minutes before slicing. Garnish with fresh herbs and serve warm.
