Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1.25 tsp salt
  • 0.75 tsp black pepper
  • 6 oz brie cheese sliced
  • 0.5 cup dried cranberries
  • 2 cloves garlic minced
  • 1 tbsp fresh thyme chopped
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 0.5 cup chicken broth

Method
 

  1. Cut a pocket into each chicken breast and season well.
  2. Stuff chicken with brie, cranberries, and thyme.
  3. Secure with toothpicks if needed.
  4. Sear chicken in olive oil and butter until golden.
  5. Add garlic and broth; cover and simmer until cooked through.
  6. Remove toothpicks, spoon sauce over chicken, and serve.

Notes

Do not overstuff to prevent cheese from leaking.
