- Preheat oven to 350°F (175°C). Grease and line an 8×8 or 9×9 baking pan.
- Cream butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each.
- Stir in vanilla and optional orange zest.
- Whisk flour, baking powder, and salt in a separate bowl.
- Add dry ingredients to wet, mixing until just combined.
- Toss cranberries with flour and fold gently into the batter.
- Spread batter into the prepared pan.
- Bake 40–50 minutes or until a toothpick inserted comes out clean.
- Cool completely, dust with powdered sugar, and slice.
Notes
Frozen cranberries may be used; do not thaw. Add orange zest for extra holiday brightness.
