Ingredients
  

Chicken
  • 4 chicken breasts or thighs
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp garlic powder
Cranberry Orange Sauce
  • 1 cup fresh or frozen cranberries
  • 0.75 cup orange juice
  • 1 tbsp orange zest
  • 2 tbsp honey or brown sugar
  • 2 cloves garlic minced
  • 0.5 cup chicken broth
  • 0.5 tsp dried thyme or rosemary
  • salt and pepper to taste

Method
 

  1. Season and sear chicken in olive oil until golden.
  2. Add cranberries, orange juice, zest, honey, garlic, broth, and herbs to the skillet.
  3. Simmer until cranberries burst and sauce thickens.
  4. Return chicken to sauce and cook until done.
  5. Serve topped with extra glaze and fresh herbs.

Notes

Add chili flakes for a spicy twist.
