Soup
  • 2 tbsp butter or olive oil
  • 1 onion chopped
  • 2 cloves garlic
  • 2 carrots chopped
  • 2 stalks celery chopped
  • 2 potatoes diced
  • 4 cups broth
  • 1 cup milk or cream

Equipment

  • Large pot
  • Blender or immersion blender
  • Knife
  • Cutting board

Method
 

  1. Sauté onion and garlic in butter or oil.
  2. Add vegetables and cook briefly.
  3. Add broth and simmer until tender.
  4. Blend until smooth.
  5. Stir in milk or cream and serve.
