  • 0.25 cup mayonnaise or Greek yogurt
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 clove garlic minced
  • 1 tsp sugar or honey
  • 0.5 tsp chili flakes optional
  • 1 tsp sesame seeds
  • 2 tbsp green onions chopped

Method
 

  1. Salt cucumbers and let sit to remove moisture.
  2. Drain and pat cucumbers dry.
  3. Mix dressing ingredients until smooth.

  6. Chill briefly and serve.

Best served fresh; add nuts for crunch or noodles for a fuller meal.
