- Mash avocado with salt and pepper in a small bowl.
- Butter one side of each bread slice.
- Layer cheese, mashed avocado, and more cheese between bread slices, buttered sides facing out.
- Cook sandwiches in a skillet over medium-low heat until golden brown on both sides and cheese is melted.
- Remove from pan, slice, and serve warm.
Notes
Use ripe avocados and cook slowly for the best texture and melt.
