Ingredients
  

  • 4 slices sandwich bread
  • 1 large ripe avocado mashed
  • 1 cup shredded cheese cheddar, mozzarella, or blend
  • 2 tbsp unsalted butter softened
  • 0.25 tsp salt
  • 0.25 tsp black pepper

Equipment

  • Skillet or frying pan
  • Spatula

Method
 

  1. Mash avocado with salt and pepper in a small bowl.
  2. Butter one side of each bread slice.
  3. Layer cheese, mashed avocado, and more cheese between bread slices, buttered sides facing out.
  4. Cook sandwiches in a skillet over medium-low heat until golden brown on both sides and cheese is melted.
  5. Remove from pan, slice, and serve warm.

Notes

Use ripe avocados and cook slowly for the best texture and melt.
