  • 8 ounces feta cheese block, not crumbled
  • 0.33 cup sun-dried tomatoes in oil chopped
  • 0.25 cup mixed olives halved
  • 2 tablespoons olive oil plus more for serving
  • 1 clove garlic minced
  • 0.5 teaspoon dried oregano or thyme
  • black pepper to taste
  • fresh herbs optional, for garnish

Method
 

  1. Preheat oven to 400°F (200°C). Place feta in a small baking dish.
  2. Scatter sun-dried tomatoes, olives, and garlic around the cheese.
  3. Sprinkle oregano and black pepper, then drizzle with olive oil.
  4. Bake 20 minutes, or until feta is soft and golden. Broil briefly for extra color.
  5. Drizzle with more olive oil, garnish with herbs, and serve warm with bread or pita.

Notes

Add a drizzle of honey before baking for a sweet-and-salty flavor twist. Perfect served warm with baguette slices or crackers.
