  • 1 cup orzo
  • 2 cups butternut squash cubed
  • 1 tbsp olive oil
  • 1 onion diced
  • 2 cloves garlic minced
  • 3 cups vegetable broth
  • 0.5 cup cream
  • 2 cups kale chopped
  • 0.5 cup parmesan grated

Method
 

  1. Cook onion and garlic in oil.
  2. Add squash and broth, simmer until tender.
  3. Blend until smooth.
  4. Add orzo and cook until tender.
  5. Stir in cream, kale, and parmesan, then serve.

Notes

Add extra broth when reheating to restore creaminess.
