Ingredients
  

  • 12 oz spaghetti
  • 2 chicken breasts boneless, sliced
  • 2 tsp Cajun seasoning adjust to taste
  • 2 tbsp olive oil
  • 3 tbsp butter
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 1.5 cups mozzarella cheese shredded
  • 0.5 cup parmesan cheese grated
  • to taste salt
  • to taste black pepper
  • for garnish fresh parsley chopped

Method
 

  1. Cook spaghetti in salted water until al dente; reserve pasta water and drain.
  2. Season chicken with Cajun seasoning, salt, and pepper.
  3. Sear chicken in olive oil until golden and cooked through; remove and slice.
  4. Melt butter in the same skillet and sauté garlic until fragrant.
  5. Add chicken broth and cream; simmer gently.
  6. Stir in mozzarella and parmesan until smooth.
  7. Toss spaghetti with sauce, adding pasta water as needed.
  8. Top with sliced chicken, garnish, and serve.

Notes

Use freshly shredded mozzarella for the smoothest sauce.
