Ingredients
  

Casserole
  • 4 cups cooked chicken shredded or cubed
  • 4 cups fresh spinach or 1 cup cooked frozen
  • 8 oz cream cheese softened
  • 1 cup chicken broth
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika
  • 1 tsp garlic powder
  • 1.5 cups mozzarella cheese shredded, divided
  • 1 tbsp olive oil or butter

Method
 

  1. Preheat oven to 350°F (175°C) and grease a baking dish.
  2. Heat olive oil in a skillet and sauté diced onion until soft.
  3. Add garlic and sauté 1 minute.
  4. Reduce heat to low, add cream cheese and broth, stirring until smooth.
  5. Season with salt, pepper, paprika, and garlic powder.
  6. Add spinach and stir until wilted.
  7. Fold in cooked chicken and 1 cup mozzarella.
  8. Transfer mixture to a baking dish and top with remaining cheese.
  9. Bake 25–30 minutes until hot and bubbly.
  10. Serve warm, garnished with parsley.

Notes

For extra creaminess, add 1/4 cup more broth. Frozen spinach must be drained well.
