  • 2 lb chicken breasts cut into bite-sized pieces
  • 8 oz mushrooms sliced
  • 1 small onion diced
  • 3 cloves garlic minced
Sauce
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 cup chicken broth
  • 1 cup heavy cream or half-and-half
Seasonings
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp Italian seasoning
Cheese
  • 1 cup shredded mozzarella or Monterey Jack

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Brown chicken pieces lightly in butter and set aside.
  3. Sauté onions and mushrooms until softened, then add garlic.
  4. Sprinkle flour and cook briefly to form a roux.
  5. Slowly whisk in chicken broth until smooth, then add cream and seasonings.
  6. Return chicken to skillet and coat with sauce.
  7. Transfer mixture to a casserole dish and top with cheese.
  8. Bake 20–25 minutes until bubbly and golden.
  9. Rest 5 minutes before serving.

Notes

Add extra veggies like spinach or broccoli for more volume and nutrients.
