Ingredients
  

  • 1.5 lb chicken breast or thighs, diced
  • 2 lb potatoes peeled and cubed
  • 1 onion diced
  • 2 cloves garlic minced
  • 2 stalks celery sliced
  • 2 carrots sliced
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 5 cups chicken broth
  • 1 cup milk or heavy cream
  • 1 tsp salt
  • 0.5 tsp black pepper

Equipment

  • Large pot
  • Wooden spoon
  • Knife and cutting board

Method
 

  1. Sauté vegetables in butter until softened.
  2. Add garlic and flour, stirring briefly.
  3. Slowly add broth, stirring until smooth.
  4. Add potatoes and simmer until tender.
  5. Stir in chicken and cook until done.
  6. Add milk or cream, season, and simmer gently.

Notes

For extra thickness, mash some potatoes directly in the pot.
