Ingredients
  

  • 4 boneless chicken breasts
  • 2 cups fresh spinach
  • 2 cups mushrooms sliced
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 1 cup mozzarella cheese shredded
  • 0.5 cup parmesan cheese grated
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • 0.5 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Preheat oven to 375°F and grease a baking dish.
  2. Season chicken breasts with salt, pepper, and Italian seasoning.
  3. Sauté mushrooms in olive oil until softened.
  4. Add garlic and spinach and cook until spinach wilts.
  5. Stir in chicken broth and heavy cream and simmer briefly.
  6. Place chicken in baking dish and pour sauce over top.
  7. Sprinkle mozzarella and parmesan cheese over chicken.
  8. Bake for 25–30 minutes until chicken is cooked through.

Notes

Let the casserole rest for 5 minutes before serving so the sauce thickens.
