Method
- Preheat oven to 375°F and grease a baking dish.
- Season chicken breasts with salt, pepper, and Italian seasoning.
- Sauté mushrooms in olive oil until softened.
- Add garlic and spinach and cook until spinach wilts.
- Stir in chicken broth and heavy cream and simmer briefly.
- Place chicken in baking dish and pour sauce over top.
- Sprinkle mozzarella and parmesan cheese over chicken.
- Bake for 25–30 minutes until chicken is cooked through.
Notes
Let the casserole rest for 5 minutes before serving so the sauce thickens.
