Ingredients
  

  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 yellow onion diced
  • 3 carrots sliced
  • 2 stalks celery chopped
  • 3 cloves garlic minced
  • 3 tbsp all-purpose flour
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 2 cups cooked chicken diced or shredded
  • 12 oz cheese tortellini
  • 1.5 tsp Italian seasoning
  • 1 tsp salt or to taste
  • 0.5 tsp black pepper or to taste
  • 2 cups fresh spinach

Equipment

  • Large pot or Dutch oven

Method
 

  1. Melt butter and olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery and cook until softened.
  3. Stir in garlic and cook until fragrant.
  4. Sprinkle flour over vegetables and cook briefly.
  5. Gradually whisk in chicken broth until smooth.
  6. Simmer until slightly thickened, then stir in cream and seasoning.
  7. Add chicken and tortellini and simmer until pasta is tender.
  8. Stir in spinach until wilted, adjust seasoning, and serve.

Notes

Add extra broth when reheating as tortellini absorbs liquid over time.
