Ingredients
  

Pasta
  • 12 oz pasta
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 3 cloves garlic minced
  • 2 tbsp tomato paste
  • 1 tsp chili flakes
  • 1 tbsp chili oil plus extra for garnish
  • 1 cup heavy cream
  • 0.5 cup Parmesan cheese freshly grated
  • 0.25 cup reserved pasta water

Method
 

  1. Cook pasta in salted boiling water until al dente. Reserve pasta water before draining.
  2. Sauté garlic in olive oil and butter until fragrant.
  3. Stir in tomato paste and cook until deepened in color.
  4. Add chili flakes and chili oil and bloom briefly.
  5. Pour in heavy cream and simmer until slightly thickened.
  6. Add pasta and reserved water, tossing until sauce emulsifies.
  7. Stir in Parmesan, garnish, and serve immediately.

Notes

Adjust chili flakes to control spice level. Use freshly grated Parmesan for best texture.
