Method
- Combine water, cinnamon, cardamom, cloves, ginger, and star anise in a saucepan. Bring to a gentle boil, then simmer 5 minutes.
- Add black tea bags or loose tea to simmering spiced water. Steep 3–5 minutes depending on strength.
- Pour in coconut milk and stir. Simmer another 2–3 minutes until hot.
- Remove from heat. Stir in maple syrup or honey and vanilla extract. Adjust sweetness to taste.
- Strain chai into cups, removing tea leaves and spices.
- Garnish with ground cinnamon or toasted coconut flakes. Serve immediately.
Notes
For a frothy chai, use a hand frother on the coconut milk before adding to the tea. You can also adjust spices to your preference for a stronger or milder flavor.
