Ingredients
  

Chai Base
  • 2 cups water
  • 2 black tea bags or 2 tbsp loose black tea
  • 1 cinnamon stick
  • 4 green cardamom pods lightly crushed
  • 2 whole cloves
  • 1 inch fresh ginger sliced
  • 1 star anise optional
Creamy Coconut Mixture
  • 1 cup full-fat coconut milk
  • 1-2 tbsp maple syrup or honey adjust to taste
  • 0.5 tsp vanilla extract
Garnish
  • ground cinnamon optional
  • toasted coconut flakes optional

Method
 

  1. Combine water, cinnamon, cardamom, cloves, ginger, and star anise in a saucepan. Bring to a gentle boil, then simmer 5 minutes.
  2. Add black tea bags or loose tea to simmering spiced water. Steep 3–5 minutes depending on strength.
  3. Pour in coconut milk and stir. Simmer another 2–3 minutes until hot.
  4. Remove from heat. Stir in maple syrup or honey and vanilla extract. Adjust sweetness to taste.
  5. Strain chai into cups, removing tea leaves and spices.
  6. Garnish with ground cinnamon or toasted coconut flakes. Serve immediately.

Notes

For a frothy chai, use a hand frother on the coconut milk before adding to the tea. You can also adjust spices to your preference for a stronger or milder flavor.
