Ingredients
  

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 2 cups potatoes diced
  • 1 can kidney beans drained and rinsed
  • 1 can black beans drained and rinsed
  • 1 cup corn kernels
  • 1 can diced tomatoes
  • 3 cups beef broth
  • 1 cup heavy cream
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 0.5 tsp cumin
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 cup cheddar cheese shredded

  • Large soup pot or Dutch oven
  • Cutting board

Method
 

  1. Brown the ground beef in a large pot over medium heat with olive oil.
  2. Add diced onion and cook until softened.
  3. Stir in garlic and cook for 30 seconds.
  4. Add potatoes, beans, corn, tomatoes, and spices.
  5. Pour in beef broth and bring to a boil.
  6. Reduce heat and simmer 20 minutes until potatoes are tender.
  7. Stir in heavy cream and cheddar cheese.
  8. Cook until melted and creamy, then serve.

Notes

For extra spice add diced jalapeƱos or hot sauce. Garnish with sour cream or tortilla chips for extra texture.
