Main Ingredients
  • 1 tbsp olive oil
  • 1 lb Italian sausage sweet or spicy, casings removed or sliced
  • 4 cloves garlic minced
  • 2 cups broccoli florets fresh or frozen
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 0.5 cup Parmesan cheese freshly grated
  • 1 tsp Italian seasoning
  • 0.25 tsp crushed red pepper flakes optional
  • salt and black pepper to taste
  • 9 oz cheese tortellini fresh or refrigerated
Garnish
  • extra Parmesan cheese
  • fresh parsley or basil chopped

  • Tongs
  • Wooden spoon

Method
 

  1. Heat olive oil in a large skillet. Brown sausage until cooked through, then remove and set aside.
  2. Sauté garlic in remaining drippings for 30 seconds.
  3. Add broccoli and cook for 2 minutes. Pour in chicken broth, cover, and steam for 3–4 minutes.
  4. Stir in heavy cream, Parmesan, and seasonings. Simmer until sauce thickens slightly.
  5. Add tortellini and cook for 4–5 minutes until tender.
  6. Return sausage to pan and toss everything together.
  7. Adjust seasoning, garnish with Parmesan and parsley, and serve warm.

Notes

For a lighter version, substitute half-and-half for cream or use turkey sausage. Add lemon zest for brightness.
