Ingredients
  

Soup Base
  • 4 cups potatoes peeled and diced
  • 6 cloves garlic minced
  • 1 onion chopped
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 4 cups vegetable or chicken broth
  • 0.75 cup heavy cream
  • 1 tsp salt
  • 0.5 tsp black pepper

Equipment

  • Large pot
  • Immersion blender
  • Cutting board

Method
 

  1. Sauté onion in butter and olive oil until soft.
  2. Add garlic and cook until fragrant.
  3. Add potatoes, broth, salt, and pepper and simmer until tender.
  4. Blend soup until smooth.
  5. Stir in cream and simmer gently before serving.

Notes

Adjust thickness with additional broth if needed.
