Ingredients
  

  • 12 oz pasta rigatoni or spaghetti
  • 1 cup ricotta cheese whole milk
  • 1 lemon zested and juiced
  • 2 cloves garlic minced
  • 3 tbsp olive oil
  • 0.5 cup Parmesan cheese grated

Equipment

  • Large pot
  • Mixing bowl
  • Whisk or spoon

Method
 

  1. Cook pasta until al dente and reserve pasta water.
  2. Mix ricotta, lemon zest, lemon juice, garlic, olive oil, salt, and pepper.
  3. Add hot pasta and pasta water, tossing to coat.
  4. Stir in Parmesan and serve immediately.
