Ingredients
  

  • 1.5 lb chicken breasts boneless, skinless
  • 2 tbsp olive oil
  • 1 cup onion diced
  • 4 cloves garlic minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 0.75 cup sun-dried tomatoes chopped
  • 3 cups fresh spinach
  • 0.75 cup Parmesan cheese freshly grated
  • 1.5 tsp Italian seasoning
  • 0.25 tsp red pepper flakes
  • 1 tsp salt
  • 0.5 tsp black pepper

Equipment

  • Dutch oven or large pot
  • Wooden spoon
  • Chef's knife

Method
 

  1. Season chicken and brown in olive oil; remove and set aside.
  2. Sauté onion and garlic in the same pot until softened.
  3. Stir in sun-dried tomatoes, Italian seasoning, and red pepper flakes.
  4. Add chicken broth and bring to a gentle simmer.
  5. Return chicken to the pot and cook until tender.
  6. Remove chicken, shred or chop, and return to soup.
  7. Reduce heat and stir in cream and Parmesan until smooth.
  8. Add spinach, adjust seasoning, and serve warm.

Notes

Keep heat low after adding cream to maintain a smooth texture.
