Ingredients
  

Main Ingredients
  • 8 oz pasta penne or rotini
  • 1 lb ground beef
  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 can Rotel diced tomatoes with green chilies 10 oz, undrained
  • 1 cup heavy cream
  • 1 cup cheddar cheese shredded
  • 0.5 cup Monterey Jack cheese shredded

Equipment

  • Large pot
  • Large skillet
  • Wooden spoon

Method
 

  1. Cook pasta until al dente and drain.
  2. Brown ground beef and sauté onion and garlic.
  3. Add Rotel and seasonings, simmer briefly.
  4. Stir in heavy cream and let thicken.
  5. Add cheeses and stir until melted.
  6. Combine pasta with sauce and serve warm.

Notes

For extra richness, add 2 ounces cream cheese.
