  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 0.75 cup Parmesan cheese grated
  • 4 cups fresh baby spinach
  • 0.5 tsp paprika
  • 0.25 tsp red pepper flakes optional
  • Fresh parsley for garnish

Method
 

  1. Pat chicken dry and season with salt, pepper, and paprika.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken 4–5 minutes per side until golden and cooked through. Remove and set aside.
  3. In the same skillet, melt butter and sauté garlic until fragrant.
  4. Pour in heavy cream and chicken broth. Simmer 2–3 minutes.
  5. Whisk in Parmesan cheese until smooth. Season with salt, pepper, and red pepper flakes.
  6. Add spinach and cook until wilted, about 2 minutes.
  7. Return chicken to skillet and spoon sauce over top. Simmer 2–3 minutes.
  8. Garnish with parsley and serve immediately.

Notes

For thicker sauce, simmer longer or add a cornstarch slurry. Serve over pasta or rice.
