  • 2 chicken breasts boneless, skinless
  • 8 oz pasta penne or fettuccine
  • 3 cloves garlic minced
  • 1 cup crushed tomatoes
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 0.5 cup Parmesan cheese freshly grated

Method
 

  1. Cook pasta until al dente and reserve pasta water.
  2. Season and sear chicken until cooked through, then slice.
  3. Sauté garlic and add crushed tomatoes and broth.
  4. Stir in cream and simmer gently.
  5. Add Parmesan and mix until smooth.
  6. Combine pasta and chicken with sauce and serve warm.
