Ingredients
  

Pasta
  • 12 oz pasta penne or spaghetti
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 5 cloves garlic minced
  • 1 can crushed tomatoes 14-15 oz
  • 0.75 cup heavy cream
  • 0.5 cup parmesan cheese freshly grated
  • 0.25 cup reserved pasta water
  • salt and pepper to taste
  • fresh basil for garnish

Equipment

  • Large pot
  • Large skillet
  • Wooden spoon
  • Colander

Method
 

  1. Cook pasta in salted boiling water until al dente. Reserve pasta water and drain.
  2. Sauté garlic in olive oil and butter until fragrant.
  3. Add crushed tomatoes and simmer until slightly thickened.
  4. Stir in heavy cream and parmesan until smooth.
  5. Toss pasta with sauce, adding pasta water as needed.
  6. Garnish with basil and serve warm.

Notes

For added protein, include grilled chicken or shrimp. Always use freshly grated parmesan for best texture and flavor.
