  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 3 cloves garlic minced
  • 0.5 cup sun-dried tomatoes chopped, packed in oil
  • 1 cup baby spinach loosely packed
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 0.5 cup Parmesan cheese grated
  • 16 oz potato gnocchi fresh or shelf-stable
  • 0.5 tsp Italian seasoning
  • 0.25 tsp red pepper flakes optional
  • salt and black pepper to taste
Garnish
  • extra Parmesan for topping
  • fresh basil or parsley for garnish

Method
 

  1. Heat olive oil and butter in a large skillet. Add garlic and sauté for 30 seconds.
  2. Stir in sun-dried tomatoes and cook for another minute.
  3. Add heavy cream, chicken broth, and seasonings. Stir to combine and bring to a simmer.
  4. Add gnocchi directly into the sauce. Simmer for 6–8 minutes until tender and sauce thickens.
  5. Stir in spinach and Parmesan. Mix until spinach wilts and sauce becomes creamy.
  6. Adjust seasoning, garnish with basil or parsley, and serve hot.

Notes

Use good-quality sun-dried tomatoes for the best flavor. Add grilled chicken or shrimp for protein.
